1/2 pound uncooked pasta
1/4 cup fresh parsley
1/4 cup balsamic vinegar
1/3 cup mayonnaise
3 to 4 cloves minced garlic
1 teaspoon salt
1 teaspoon black pepper
1/4 pound smoked mozzarella cheese, shredded
2 tablespoons parmesan cheese (optional)
Boil pasta in water according to instructions on package, or until al dente. Drain.
In food processor, mix together all other ingredients until combined. Toss with pasta.
Makes two heaping bowls.
