Samosa Tacos

DSC03771If you love Samosas (or Indian food, or spicy potatoes), try this easy variation on a traditional deep fried snack.

1 pound (4-6) potatoes, cubed and boiled.

While they are boiling (and you’ll have some time to spare), mince (vitamix works great here) and sauté in tallow, lard or coconut oil:

5 carrots, 1/2 cup green beans, 1/2 cup cauliflour, peas or other vegies
1 inches fresh ginger
1 inch fresh turmeric
1 onion
1/2 tsp cumin
1 tsp coriander or 1 tsp curry powder
1 1/2 tsp Garam Masala
Salt & Pepper to taste
(Note: it can use more spices that this. This is pretty mild.)

When the potatoes are done, drain and add sauté to them. Mix and mash.

Mix a bit more, then serve on corn taco shells heated on a tallow or coconut oiled pan.
